I would be surprised to find that any city softens
their water, that would cost a ton of money. You
stated that the beer you make tastes just fine, which
also tells me that your city water is not softned. =
The reasoning behind this is that you live in Indiana
(land of unreasonably hard water), softening generally
refers to a process by which all the positive ions
(Ca, Mg, and the like) are replaced by Na. People who
have generally soft water to begin with can get away
with using softened water for brewing because the
[ppm] of the Na will be inherently low. However, for
us in Hoosierland, if we were to use soft water the
[Na] would be astronomically high, and the other
elements would be very low. Low Mg and Ca mean low
efficiency in the mash, while high Na means really
freaking bitter beer.
