Update -- a very small amount of metabisulfite will treat the chloramine 
quickly, almost instantly, reducing it to simple ions (in very small 
concentrations because the chloramine is there in ppm quantity in the 
first place) that are normally in brewing mixtures anyway, ammonium, 
sulfate, chloride.
