THC members:

I have a clone recipe from the July/August Zymurgy for Bell's Double Cream Stout which I think would work well for the Bourbon Barrel Project. In short form:

        10 lb Munich malt
        1 lb flaked barley
        1 lb roasted barley

single infusion at 150-152 for a highly fermentable wort

1.25 oz Nugget ( 10% AA ) at 60 min ( another high alpha hop would be suitable also )

90 minute boil

Wyeast 1056

target OG 1.068
target IBU 50

The extract version would steep 2 lbs of pale malt with the specialty grains at 150 degrees, add 3.3lbs of amber malt extract syrup, and 3.3 lbs of dark malt extract syrup.

This beer should have enough roast character, body and alcohol to stand up to the bourbon, but still not cause brewhouse problems due to massive amounts of grain for a very high gravity beer. It will be more than big enough for us to serve at next years Winter Warmer also.

For those of you who are considering participating, let me know what you think. If this seems suitable, I will e-mail the full recipe file later ( this e-mail list automatically kicks out e-mails with attachments ). Thanks,

                                                                            Lloyd
